Paul Doubet was born on February 2, 1959. He joined his parents Dale and Dorothy (“Dot”), as well as brother Michael, in Waco, Texas. Paul’s early years were influenced by extended family in the area, especially his grandfather, Moco Embry. It was during Paul and Moco’s fishing trips that Paul’s love for outdoor life was found. And so, it was in nature, being active, that Paul found his place and his passions throughout his life.
When Paul was five years old, the family made Irving, Texas, their hometown. In Irving, Paul became a big brother to sister Donita, six years his junior. He also attended grammar through high school, keeping his grades “just good enough” to be eligible to play sports. And play he did, becoming a soccer star. Paul had an innate talent and an athletic aptitude that saw him shine on the field. While attending MacArthur High School, Paul was frequently featured in the sports’ section and was selected to tour Europe on the US National Youth Soccer team. Soccer also delivered his scholarship to play at Midwestern State University. Still, it was after he hung up his cleats that Paul created his most rewarding and cherished moments.
Paul met the love of his life, Elizabeth (Liz) Harvey while working at Darr Equipment. They were married within a year, establishing their family with daughter Kim and son Dustin. The family was complete with the addition of Rachelle a few years later. It was this wonderful chaos, companionship, and connection of family in which Paul took so much pride and found so much joy.
With his family in arms, Paul sought to find the country living he loved from childhood. The family lived ranch-life in towns like Peaster, Ponder, and Sanger. Always happy to be on a boat fishing, astride a horse, or relaxing with a beloved dog by his side (or more likely on his lap). These simple pleasures allowed him time to feed his introspective needs and his desire to be Still in a busy, demanding world.
Paul took pride in providing for his family. He was an extremely hard worker. At one time he participated in a Doubet family business, 10-9 Copies and Office Supplies. The experience proved frustrating and fun; creating fabled family tales shared between siblings for years. However, his most defining career was as a sales and finance professional in the automotive and RV industry. He used his country boy vibes and the dry sense of humor he inherited from his father to make the deals and find success. In the 20 years plus at the dealerships, Paul came to be known as “Tex.” This nickname was a perfect reflection of his personality, to which his family and friends can attest.
In the early hours of May 29, 2025, Paul passed away. A life too short in time, but long and rich in blessings and love. He was certain in his faith; that with death we all would be going home to rest and rejoice. Paul will remain in the hearts of his family and friends.
Paul is survived by his wife, Liz Doubet, and their children, Kim Mena and husband Ronnie, Dustin Doubet and wife Michelle, and Rachelle Lakey and husband Matt. “Pawpaw” will also be remembered by granddaughters, Makenzie Allen, Anabelle Doubet, Payton Beebe and Madi Lakey, and grandsons, Cale Doubet, Asher Doubet and Bowen Lakey. To quote Paul, “Pawpaw loves them babies.”
Paul’s memory will also be cherished by his sister Donita Doubet. He remains in the hearts of his extended family, especially his Aunt Juanita Jones, and his many cousins.
Paul was proceeded in death by his parents, Dale and Dot Doubet and his older brother, Michael Doubet.
